Veggie packed couscous salad
In the summer we like to keep things simple and fresh, like this couscous salad. Add as many fresh herbs as possible. We love parsley, cilantro and mint but you can add what ever herbs float your couscous-boat.
Ingredients
1 cucumber
1 chili-pepper
4 ripe tomatoes
1 handful of sun-dried tomatoes
2 red bell-peppers
1 clove of garlic
1 bunch of parsley
1 bunch of cilantro
1 bunch of mint
1 slab of Feta cheese
the zest of 1 lemon
the juice of 1/2 lemon
extra virgin olive oil,
salt and pepper to taste
Method
This is such a great dish for on the road. No need to use the stove, we let the couscous well in cold water. Chop all ingredients finely, and add to the chopped veggies, all of the liquids (lemon juice and olive oil) in a bowl. Then add the zest of the lemon, minced garlic salt and pepper.
Mix all ingredients well and slowly add the couscous a little bit at a time. Don’t overdo it with the couscous, it’s mainly a filler and not so much a flavor enhancer.
Your taste-buds will thank you!
Finish off your salad by adding some crumbled feta on top and voila!
